A Winnow Case Study
Potli, the London Indian restaurant known for sustainable sourcing, wanted to reduce food waste as part of its FoodSave project. To understand where waste was coming from, Potli worked with Winnow and used the Winnow Waste Monitor System to track kitchen waste over four weeks with minimal disruption.
Winnow’s audit showed that plate waste was the biggest problem, driving over 70% of food waste value. With weekly reviews and action planning, Potli cut average food waste cost per cover from £1.28 to £0.92, saving about £325 per week and an estimated £13,529 per year, while reducing waste by 1.6 tonnes annually.
