Novotel Phuket Kamala Beach, a hotel within the AccorHotels group, faced the challenge of meeting the corporation's target to reduce its food waste by 30% by 2020. To address this, the hotel partnered with vendor Winnow and implemented the Winnow System, a smart meter designed to automatically measure kitchen waste.

By using the Winnow System to gain visibility into what and where food was being wasted, the kitchen team was able to control production levels and retrain staff. This solution led to a 71% reduction in food waste by value. The hotel now saves an estimated 29,000 meals and $53,670 annually, making it a blueprint for others. Winnow provided the tools and data necessary to achieve these significant results.
