MGM Macau, a leading integrated resort operator, sought to address its food waste as part of a broader commitment to sustainability and in support of Macau’s waste reduction goals. To tackle this challenge, the resort partnered with vendor Winnow to implement its AI-powered food waste management system at its MGM COTAI property.

By using Winnow's system to track and analyze waste data, chefs were able to redesign production plans and create new recipes from repurposed ingredients. This data-driven solution from Winnow led to a 29% reduction in food waste in the staff canteen, saving 65,000 meals and over MOP$716,000 in food costs annually, while also avoiding 112.5 tons of CO₂e emissions.
