How University of Sussex reduced food waste by more than 70%

The University of Sussex worked with Winnow and Chartwells to address chronic food waste and improve the sustainability and financial performance of its catering operations. At Eat Central, one of the university’s main dining areas, the team needed a way to better manage waste as student numbers grew and services expanded.

Winnow rolled out its Winnow System in February 2015 to automatically track food waste and give chefs visibility at the point of disposal. The results were significant: food waste by value fell by 79%, 11 tonnes of food waste were avoided, and an estimated 50 tonnes of CO2 emissions were saved, helping drive cultural change across the kitchen.
