A Winnow Case Study
Réseau Santé Balcon du Jura (RSBJ), a healthcare institution in the Sainte-Croix region of Vaud with 88 beds and about 320 meals a day, was looking to improve nutrition and reduce food waste as part of its care process. Winnow supported RSBJ with its food waste measurement and analysis system to better understand patient and resident eating habits and improve menu planning.
Winnow helped RSBJ use detailed waste data to adjust breakfast, dinner, and snack offerings, while also refining portion sizes and replacing the most wasted dishes without reducing nutritional value. The result was a 10% reduction in food waste by cover, estimated CO2 savings of 2.4 tonnes, and an 8% reduction in food waste as a percentage of cost.
