How Novotel Warsaw Centrum reduced food waste by over 50%

Novotel Warsaw Centrum, part of AccorHotels, wanted to hit ambitious sustainability goals by reducing food waste, but the team needed better visibility into what was being thrown away and why. Winnow was brought in to measure food waste by value and help the kitchen drive operational changes using its smart waste-tracking system.

Winnow installed its system at Novotel Warsaw Centrum in July 2016, enabling the team to identify waste sources quickly and adjust production and service practices. Within one week, they discovered about 700 kg of food was being wasted weekly, and within three months the hotel cut food waste by 55%, saving an estimated 27,000 meals and €18,000 to date.
