How Fairmont The Palm is adjusting their buffets and reducing food waste by 61%

Fairmont The Palm Dubai, a luxury resort on Palm Jumeirah, was looking for a better way to track and reduce food waste in its buffet restaurant. The hotel partnered with Winnow and began using Winnow’s AI-driven analytics and reporting tools in April 2017 to understand where waste was occurring and why.

With Winnow, the team reviewed waste data daily and made simple operational changes, such as adjusting menus and using smaller serving bowls. As a result, Fairmont The Palm Dubai reduced food waste by 61%, prevented more than 25,000 kg of food from being wasted, and achieved an estimated annual saving of AED 500,000 while saving over 70,000 meals per year.
