Hilton Rotterdam reduces food waste by 25% in eight months using AI

Hilton Rotterdam, a luxury hotel in the Netherlands, wanted to improve sustainability and support Hilton’s Travel with Purpose goal of cutting food waste in half by 2030. To do that, the hotel needed a better way to measure and report waste in its kitchens, and turned to Winnow’s AI-powered food waste tracking technology to uncover where overproduction was happening.

Winnow helped Hilton Rotterdam analyze waste patterns and make practical changes such as adjusting portion sizes, reducing event overproduction, and repurposing surplus ingredients into new dishes. As a result, Hilton Rotterdam reduced food waste by 25% in eight months, saved €16,000 in annual food costs, prevented 8.7 tons of CO₂e annually, and saved 5,000 meals each year.
