Friends House, a self-service restaurant known for its sustainability focus, wanted to reduce food waste even further despite already recycling waste and operating below the industry average. Winnow’s FoodSave audit, using the Winnow Waste Monitor System, helped the team identify where prepared-not-served and plate waste were coming from.
Winnow worked with Friends House over four weeks to monitor waste and review weekly results, leading to changes such as reducing batch cooking near the end of service and encouraging customers to take only what they would eat. As a result, food waste fell from 4.8% to 2.6% of sales, overall waste dropped 48%, prepared-not-served waste was cut by 94%, and Friends House saved an estimated 2.2 tonnes of food waste and £2,929 per year.
