Temporis is a 20-seat, tasting-menu-only Chicago restaurant founded by former Les Nomades chefs Sam Plotnick and Don Young. As unknown operators in a neighborhood location, they faced the challenge of delivering consistently exceptional food and service on tight margins—where every ingredient, bottle of wine and seat must be precisely managed to win diners’ trust and industry recognition.

They solved this by committing to a focused tasting-menu model with curated wine pairings, growing much of their produce hydroponically and building distinctive tableside gardens, and building a culture of precise service and accountability. Using TouchBistro POS to track wine inventory and sales helped reduce waste and control costs; the result was a Michelin star, a rapid surge in reservations (doubling covers in a week and breaking even for two months within 12 hours of the announcement), and a plan to operate to a two‑star standard.
