MeMe’s Diner, a 40-seat neighborhood full-service restaurant in Brooklyn opened in 2017 by Libby Willis and Bill Clark, serves modern American comfort food and relies on an iPad POS. While monitoring weekly sales and menu performance, the owners discovered their non-alcoholic beverage cost of goods sold (COGs) was 24–26%—well above the 15–20% industry norm—and needed clearer reporting to pinpoint the issue.
Using TouchBistro’s cloud reporting to break sales down by category and menu item (alongside an external inventory tool), they identified three high-cost beverages and made small price increases, optimized vendor ordering, and adjusted inventory levels. The changes cut non-alcoholic beverage COGs by 6% with no customer pushback, created a repeatable process for other menu categories, and gave the team clearer financial visibility.
