How to Grow Your Food Truck Business into a Restaurant Empire

The Peached Tortilla began as Eric Silverstein’s single food truck in 2009 and grew into a multi-venue Austin brand. Eric faced typical early-stage challenges—tight startup capital, relentless truck maintenance and heat issues, and the need to expand cautiously rather than all at once—to move from a mobile operation toward brick-and-mortar and catering services.

To scale, Eric adopted TouchBistro’s iPad-based POS when opening his first restaurant, using tableside ordering, heat maps and robust daily and year-over-year reporting. The system reduced hardware and licensing costs, sped service and table turnover, improved inventory and sales visibility, and supported expansion into two restaurants, two trucks, a commissary kitchen, catering and an event space.
