un-cooked Chicago is a plant-based, grab-and-go concept founded to make healthy, sustainable food affordable and accessible. Launched just weeks before the COVID-19 lockdown, the West Loop restaurant lost its expected office-lunch clientele and faced unpredictable demand while trying to uphold low prices and environmentally friendly practices.
By leaning on Toast POS for integrated reporting, forecasting and scheduling, un-cooked optimized staffing and inventory, reduced waste, tracked customer behavior, and nudged customers toward direct ordering to save on delivery fees. The tech-enabled strategy allowed the team to adapt quickly, sustain their mission-driven operations and expand to a second Bucktown location within a year.
