Maru Hospitality Group, a Michigan sushi and ramen operator founded by Robert Song, outgrew QuickBooks Desktop as manual invoice entry, lack of daily sales visibility, and lengthy bank reconciliations (previously 7–35 hours per month across seven locations) hampered efficiency. Seeking more than basic accounting, Maru Hospitality Group selected Restaurant365, an all-in-one, cloud-based accounting and operations platform, to get integrated POS data and deeper operational reporting.
After implementing Restaurant365 in early 2018, Maru used reports such as actual vs. theoretical (AvT), menu item analysis, and purchases-by-vendor/item to change menu mix, cut vendors, and reduce waste—actions that drove about $900,000 in increased sales and $300,000 in reduced food purchases (a $1.2 million impact between 2018–2019). Restaurant365 also cut bank reconciliation from hours to minutes (one half hour to reconcile all seven restaurants), helped reduce menu size ~20% and ribeye waste by over 1,000 lbs (~$10k), lowered labor from roughly 32–37% to 25–30%, and enabled fast reporting for PPP/grant applications.
