Crooked Hammock Brewery Teams up with MarginEdge to Control Costs

Crooked Hammock, a three-location waterfront brewery group in the Mid‑Atlantic led by Culinary Director Ted Deptula, struggled with disconnected back‑of‑house systems and needed better control over food and beer costs, inventory, vendor pricing, and recipe costing. In September 2019 they implemented MarginEdge to replace those fragmented tools and give chefs and accounting a single platform for costing, inventory and invoice processing.

MarginEdge enabled Crooked Hammock to build and cost recipes, auto‑update ingredient prices from processed invoices, set price alerts on key SKUs, and use theoretical usage to uncover over‑portioning (for example, excess fries) so they could reduce waste and lower costs. The platform also saved the team “countless hours” on bookkeeping and sped training for a new location with preloaded recipes, delivering clearer food‑cost visibility and more profitable, data‑driven menu decisions.
