How Formaggio Kitchen Segmented Their Way to Success

Formaggio Kitchen, a specialty cheesemonger with three locations (Cambridge, Boston’s South End, and Manhattan’s Essex Street Market), faced the challenge of competing locally and online while avoiding customer churn from irrelevant emails. To address this, the team led by Mary Chapman and Tim Bucciarelli turned to Mailchimp, using its segmentation features (including Mailchimp Pro’s advanced segmentation connected to their Magento store) to tailor communications by location, product interest, and purchase behavior.

Using Mailchimp segmentation, Formaggio Kitchen targeted customers with weekly dinner menus, a weekly wine email, monthly class notifications, and interest‑based messages, leveraging Magento purchase history to make offers more relevant. The Mailchimp solution helped reduce unsubscribes and—according to the team—correlated with increased sales by letting them send more targeted campaigns without spamming customers.
