Cutting Down Food Waste and Food Cost

MGM Gold Strike, the Gold Strike Resort & Casino in Robinsonville, MS, faced rising food costs and significant waste in its all-you-can-eat buffet operations. To address the issue, the team turned to LeanPath and began tracking waste with the LeanPath 360 program, using LeanPath Trackers in the Garde Manger and Buffet Kitchen.

LeanPath helped the resort identify major sources of overproduction, especially at breakfast and late-night meal periods, prompting shifts to à la carte cooking and better reuse of ingredients. After 12 months, MGM Gold Strike reduced pre-consumer food waste by more than 80%, cut food costs by 5–6% per month on average, and increased staff engagement and awareness around waste.
