TGI Fridays, the global casual-dining brand founded in New York in 1965 with more than 900 outlets and ~74,000 staff, needed to modernize recipe management for its international division. Kevin Miller, senior director of culinary and beverage development overseeing 500 restaurants, found the old system—arrays of Word documents on a server—slow, insecure and hard to share with franchisees, while the business also needed faster menu refreshes, better ingredient tracking and updated photography.
They adopted Fourth’s Recipe & Menu Engineering solution to centralize ingredients, prep and serving recipes and connect development, marketing and franchise teams with one-click access to accurate, up‑to‑date specifications. The change cut administration drastically (one project fell from ~80 man-hours to under an hour), improved cost control, allergen/nutritional management and ingredient substitutions, and freed the culinary team to create more new menu items (130 in one year) and supporting training and visual materials.
