Brains, founded in 1882 and still family-run, brews Wales’ best-known beers and serves 270 pubs, hotels and bars while increasingly focusing on high-quality food across 13 distinct menus for five pub styles (120 managed, 150 tenanted). Head office was developing those 13 menus twice a year using thousands of documents and spreadsheets, so ingredient price changes had to be updated manually, forecasting was unreliable and they had little operational control.
Brains adopted Fourth’s recipe and menu engineering solution to link recipes, prices and menus in real time, enforce supplier and margin rules, capture nutritional/allergy data and integrate with EPOS. The system eliminated manual tasks, freed chefs to create profitable menus, improved costing and forecasting, increased margins and enabled fast, consistent menu changes across the estate—saving more than it costs and providing confidence in pricing and performance.
