A national full‑service restaurant chain engaged Fishbowl to evaluate two new value menus and answer two key questions: which menu would increase guest visit frequency, and which would encourage guests to trade away from higher‑COGS specialty items.
Using Fishbowl’s Guest Analytics to run a controlled test across a subset of stores, the chain found the $10 Entrée & Salad menu was slightly more effective than the 10 Under $10 option, but neither produced a statistically significant increase in visit frequency. The Entrée & Salad shifted purchases away from specialty items (toward entrées like pizzas), while the 10 Under $10 moved guests toward specialty items; the test delivered low‑risk, statistically sound insight so the client could avoid committing to an ineffective program and continue data‑driven experimentation.
