In-Store Deli/Bakery worked with ReposiTrak to address weak production planning and high shrink, which was draining margins in the in-store bakery and deli departments. ReposiTrak implemented its Fresh Market Manager with hour-by-hour, store-by-store forecasting, plus visibility and analytics at the store/item level to support production planning across in-store, commissary, and outside vendor sources. The results included a 23% improvement in sales dollar trend over two years, a 25% improvement in gross margin dollars net of shrink, a 2% improvement in gross margin percent, and a 23% reduction in shrink units with a 6% reduction in shrink dollars.
