Leading Bakery and Deli Store, a ReposiTrak customer, was struggling to execute an effective in-store bakery assortment plan. The team lacked labor to bake a wide variety of products consistently, quality standards were slipping, shrink costs were rising, and out-of-stocks on popular items were too high. ReposiTrak’s Fresh Market Manager was used to help address these operational challenges.
ReposiTrak optimized the assortment by store cluster based on consumer demand and reduced flavor proliferation to keep only the best-performing varieties. This cut SKUs from 814 to 521, realigned the product schematic toward growth items, and improved cash flow by maximizing sales and reducing shrink. The customer also aligned promotions and production staffing with the new process for better performance.
