Case Study: Akindo Sushiro achieves swift data-driven decisions by analyzing 4 billion rows with Qlik

A Qlik Case Study

Preview of the Akindo Sushiro Case Study

Akindo Sushiro uses Qlik to analyze 4 billion rows of data to achieve swift management decisions

Akindo Sushiro is Japan’s leading conveyor-belt sushi chain, operating about 430 restaurants, serving 120 million customers and roughly 1 billion plates a year. With RFID tags on every plate, the company accumulated billions of transaction records, but its Excel-based analytics couldn’t handle the volume or provide easy-to-use insights for non-technical managers, hampering trend analysis and operational decision-making.

Akindo Sushiro deployed Qlik on Amazon Web Services with local partner Ashisuto to scale analytics and make data accessible across divisions. The platform cut report turnaround from 3–4 days to one day, drove cross-department adoption for sales and product planning, and uncovered actionable insights—such as correcting assumptions about dessert performance—while enabling waste-reduction and cost-savings opportunities.
