Workweek Lunch, created by former health journalist Talia Koren, grew to 140k engaged Instagram followers by promoting intuitive eating and anti-diet meal ideas. Koren tested a subscription model first with a 50-person beta and sold eBooks and downloads to gauge interest, then built anticipation via Instagram and email, offered a launch-week bonus, and rolled out a meal-prep membership. The approach paid off: 300 sign-ups in the first week and 750 members within two months, validating the membership strategy and delivering faster-than-expected revenue growth.
