A FoodDocs Case Study
Captain Grappo, a gluten-free ready-to-eat meal producer and retailer, needed a better way to manage food safety as the business grew from a small local operation into a higher-volume operation handling more production and more staff. Before FoodDocs, Store Manager Ruth Baker relied on printed charts and manual routines with little structure, making it difficult to consistently track temperatures, cleaning, cooling, and other critical food safety tasks.
To solve this, Captain Grappo implemented FoodDocs’ digital food safety management system, including its monitoring logs, task checklists, recipe storage, and HACCP support. The shift from paper to digital took about three weeks and helped the team work more efficiently, improve accountability, and stay inspection-ready. FoodDocs reduced Ruth’s food safety admin time from about two hours per day to 5–10 minutes, saving roughly 60 hours per month and 720 hours per year, or an estimated $23,738 annually in labor costs.
