Tallink Hotels, led at restaurant SUME by head chef Kristjan Kelder, faced the common hospitality challenge of managing food safety with time-consuming paper records and getting staff to understand and follow HACCP procedures consistently. To solve this, they adopted the digital HACCP solution FoodDocs to bring food safety procedures closer to the team and replace printed logs and manual follow‑ups.

FoodDocs was implemented in just a few days—creating site plans and uploading pest control, cleaning, maintenance and contract documents—and now sends weekly reminders, lets staff fill monitoring sheets on tablets, and captures real‑time temperature data that informs acceptance or rejection of deliveries. The FoodDocs system has been rolled out across almost every Tallink hotel (including new restaurants Flavore and Nok Nok), reduced paper use, improved compliance and recordkeeping, and enabled faster, data‑driven decisions about supplier quality.
