McIlhenny Company, the family-owned maker of Tabasco® sauce in Avery Island, Louisiana, needed to protect its production facility, corporate headquarters, and pepper fields after Hurricane Rita nearly flooded the factory and exposed the site to serious power and storm-surge risks. The company turned to Cummins for a standby power solution that could keep critical operations running during utility outages and hurricanes.

Cummins designed and installed a custom standby power system featuring a PowerCommand® DMC 200 paralleling system with remote monitoring, transfer switches, and generator sets including two 750 kW units plus 500 kW and 250 kW generators. The system now powers the factory, dewatering pumps, and corporate office, helping McIlhenny Company maintain operations through outages and severe weather; the company reports it has relied on the Cummins system frequently and was able to run a normal 10-hour shift during one utility failure.
