Nofima Norconserv AS uses Comsol to pinpoint hot and cold spots in fried halibut fish rolls

Nofima Norconserv AS, a research group majority owned by the Norwegian Ministry of Fisheries, collaborated with a master chef to develop a new fried halibut fish roll recipe. Their challenge was to ensure the oval-shaped fish roll was cooked properly and safely by understanding its thermal behavior during and after frying. They used COMSOL Multiphysics to model the process and locate hot and cold spots.

Using the model created with COMSOL, the team was able to determine the optimal frying time, how long it took for the center to reach the desired temperature, and the necessary cooling period. This research directly supported the chef in perfecting the recipe, which subsequently won an international cooking competition, successfully promoting halibut.
