Sharky's Woodfired Mexican Grill, founded by Steve Paperno, is a fast-casual chain focused on organic, wood‑fired Mexican food with 19 locations and 12 more planned. Daily deliveries of fresh ingredients generated a high volume of varied vendor invoices that managers mailed to corporate, where an in‑house accountant processed about 125 bills weekly and printed, signed and mailed checks — a slow, paper‑heavy bottleneck.

Sharky’s adopted Bill.com integrated with QuickBooks so managers scan invoices into the system for electronic approvals while payments are scheduled and sent by Bill.com via check or electronic transfer. The change eliminated piles of paper, saved hours of employee time, reduced administrative distraction, and will be rolled out to franchisees as part of accounting training so they can focus on operations and guest experience.
