J&G Grill, an upscale casual restaurant at the St. Regis Bal Harbour and part of Jean-Georges Vongerichten’s Culinary Concepts, opened in 2012 to strong acclaim but lost momentum after significant management turnover. By mid-2013 capture rate had fallen roughly 20% and the restaurant was struggling to meet sales goals when new GM Robert Delarosa joined and turned to Avero’s restaurant analytics to diagnose performance gaps.
Delarosa used Avero to optimize the menu (item popularity, modifiers) and target server training and incentives based on sales data, while using Avero Mobile for daily, on-the-floor insights. Within two months average check rose $5 YOY and within six months it was $25 higher; by Q3 2013 sales, covers and average check were more than 9% ahead YOY, and the restaurant’s Forbes rating moved from 2-star to 4-star.
