At the Arizona Biltmore’s Wright’s Restaurant (a Waldorf Astoria Resort), manager Dolan Olson needed a way to motivate his competitive serving team to increase wine sales. He partnered with Avero, a hospitality analytics provider, to develop a program that would track and drive server performance.

Using Avero’s reporting, Dolan ran a staff contest that tracked incremental glass and bottle sales by server, posted daily standings, and rewarded weekly and monthly winners. The program boosted participation and resulted in a $45,000 year‑over‑year increase in wine sales from Oct 10 to Dec 31, 2014, and Dolan continues to rely on Avero’s insights to sustain the gains.
