The Croissanterie opens a brick-and-mortar bakery in 2022 with Arkansas Small Business and Technology Development Center

The Croissanterie, a business started by chefs Wendy Schay and Jill McDonald, sought to scale up their venture from a farmers market operation to a food truck. They needed assistance with business planning, financials, and securing financing, so they turned to the Arkansas Small Business and Technology Development Center (ASBTDC) for guidance.

The ASBTDC, through consultant Nicolas Mayerhoeffer, provided comprehensive consulting services including business plan development, market research, and assistance with securing a startup loan. This support enabled the successful launch of their food truck in 2020. The ASBTDC then guided their subsequent expansion to a full-service bakery and cafe, which opened in 2022, facilitating their significant growth from a weekend market stall to a brick-and-mortar establishment.
