Food Delivery Optimization and Restaurant Employee Scheduling

Maestro Pizza, a leading pizza brand in Saudi Arabia, wanted to improve food delivery optimization and restaurant employee scheduling while boosting productivity across its branches. To analyze these challenges, the company worked with Jaco-Ben Consulting using AnyLogic simulation software to model demand, staffing, delivery routes, and service levels.

Using AnyLogic, the consultants built a detailed network model with GIS maps and ran experiments to test different staffing and workflow scenarios. The results showed that Maestro Pizza needed five fixed drivers plus one floating driver on Sundays, and five fixed plus three floating drivers on Saturdays; they also found that adding delivery drivers had a much bigger impact than adding cashiers, helping reduce preparation delays and store queues.
