Anthesis worked with Righteous Gelato, a small-batch gelato manufacturer in Calgary, to tackle food loss and waste at their production facility. The challenge was to make their operation more efficient and reduce the amount of valuable ingredients and finished product being wasted during the manufacturing process.
Through an on-site assessment, Anthesis identified and quantified three key opportunities for savings. These low-cost solutions included tilting holding tanks to recover more gelato and using water to flush residual milk and gelato from pipes, preventing waste. By implementing these recommendations, Righteous Gelato has the potential to realize significant annual savings, including over $132,000 in financial savings, the recovery of enough food for over 20,000 meals, and a reduction of 25.7 tons of CO₂e.
