Consolidating Data and Improving Sake Quality using AWS and RATOC Systems with Tsurumi Syuzou

Tsurumi Syuzou, a historic sake brewery in Tsushima, Aichi, wanted to improve sake quality and preserve brewing know-how while reducing dependence on the intuition of veteran toji masters. Using Amazon Web Services and RATOC Systems’ Moromi Diary Cloud, the company faced the challenge of controlling fermentation temperatures more consistently and enabling remote monitoring across the brewery.

Amazon Web Services helped power the Moromi Diary Cloud solution with AWS IoT, AWS Lambda, Amazon DynamoDB, and Amazon S3, allowing temperature data to be collected wirelessly, visualized on graphs, and checked in near real time from PCs and smartphones. With Amazon Web Services, Tsurumi Syuzou improved sake quality, reduced overnight monitoring work, and strengthened skills transfer across a younger team; its Daiginjo Gazan and Junmai Daiginjo Gazan won gold medals at the 2022 US National Sake Appraisal.
